Mexican Low Carb Diet Food

Mexican food is a go-to comfort food for many people. However, those adhering to a low-carb diet may be avoiding their favorite south-of-the-border dishes for fear of succumbing to the taco. Believe it or not, Mexican food can be low in carbohydrates, as long as you are willing to give up your beloved tortillas. After all, cheese is a main ingredient in Mexican food, and cheese is very low in carbohydrates--awesome news for low-carb Mexican food lovers. Add this to my Recipe Box.

Queso Dip & Veggies

    Who doesn't love ordering a warm cheese dip at Mexican restaurants? Unfortunately, the dipping item of choice tends to be a high-carb tortilla chip. The good news is that you can re-create this appetizer at home, minus the chips. The same kind of cheese Mexican restaurants use is also sold in most major grocery stores: try shredded monterey jack or cheddar if you can't find authentic Mexican queso blanco. Melt the cheese over a low flame following your favorite recipe, but instead of using chips, try dipping baby carrots and celery into the cheese. Both are delicious with queso dip and add a nice, satisfying crunch. The best part is that the entire appetizer is low-carb friendly.

Fajitas sans Tortilla

    The sound of sizzling fajitas does not have to be a distant memory on a low-carb diet. Fajitas are actually very low in carbohydrates as long as you avoid the accompanying tortillas and rice and beans. Make your fajitas with strips of chicken, steak or shrimp along with a mix of bell peppers, onions and mushrooms. Top the modified fajitas with homemade guacamole, shredded cheese and low-fat sour cream. With all of the amazing flavors piled onto your plate, you'll never miss the tortilla.

Stuffed Peppers

    Bell peppers are a staple vegetable in low-carb diets, since they are very low in carbohydrates and contain zero fat. They are also the perfect shape for stuffing. For a delicious low-carb dinner, try no-rice stuffed peppers. Replace the rice called for in traditional recipes with low-fat ground beef; a blend of shredded cheeses such as colby, cheddar and provolone; diced tomatoes, jalapeos and tomato sauce. During baking, the flavors will meld together, and the resulting warm and softened peppers will make a mouth-watering meal that is completely friendly to a low-carb diet and lifestyle.
